Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until translucent, about 5 minutes.
- Stir in garlic, turmeric, and ginger, and cook for 1 minute more.
- Pour in chicken broth and bring to a simmer.
- Add carrots, celery, and shredded chicken to the pot.
- Season with salt and pepper, then simmer for 20 minutes until vegetables are tender.
- Garnish with fresh parsley before serving.
