- 2 lbs beef chuck, cut into chunks
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tbsp paprika
- 1 tsp caraway seeds
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 4 cups beef broth
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat.
- Sear beef chunks until browned, then set aside.
- In the same pot, sauté onions and garlic until translucent.
- Add paprika, caraway seeds, salt, and pepper; cook for 1 minute.
- Return beef to the pot, add carrots, potatoes, bell pepper, and beef broth.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
- Adjust seasoning as needed and serve hot.
Notes
- You can add a splash of red wine for extra flavor.
- Best served with crusty bread or traditional German dumplings.
