- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix flour, sugar, salt, and baking powder.
- In another bowl, whisk melted butter, milk, eggs, and vanilla.
- Add wet ingredients to dry and mix until just combined.
- In a small bowl, blend cream cheese with powdered sugar until smooth.
- Gently fold blueberries into the batter.
- Pour half the batter into the prepared loaf pan, spread cream cheese mixture over it, then top with remaining batter.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Allow to cool before slicing and serving.
Notes
- Use fresh blueberries for best flavor.
- Can substitute frozen blueberries, but do not thaw first.
- Serve toasted with butter for extra indulgence.
