  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix flour, sugar, salt, and baking powder.
  3. In another bowl, whisk melted butter, milk, eggs, and vanilla.
  4. Add wet ingredients to dry and mix until just combined.
  5. In a small bowl, blend cream cheese with powdered sugar until smooth.
  6. Gently fold blueberries into the batter.
  7. Pour half the batter into the prepared loaf pan, spread cream cheese mixture over it, then top with remaining batter.
  8. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
