Ingredients

  • 2 tbsp olive oil
  • 1 lbs chicken breast, diced
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • Juice and zest of 1 large lemon
  • 1 cup chopped spinach or kale
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned. Remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant and translucent.
  3. Add chicken broth and bring to a boil. Stir in orzo pasta and cook until al dente.
  4. Return chicken to the pot, add lemon juice and zest, and cook for another 5 minutes. Stir in greens and season with salt and pepper.
  5. Serve hot, garnished with fresh herbs.
