Ingredients

- 2 tbsp olive oil
- 1 lbs chicken breast, diced
- 1 small onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup orzo pasta
- Juice and zest of 1 large lemon
- 1 cup chopped spinach or kale
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until fragrant and translucent.
- Add chicken broth and bring to a boil. Stir in orzo pasta and cook until al dente.
- Return chicken to the pot, add lemon juice and zest, and cook for another 5 minutes. Stir in greens and season with salt and pepper.
- Serve hot, garnished with fresh herbs.
Notes
- Use fresh lemon for the best flavor.
- You can substitute spinach with kale or swiss chard.
- For a creamier soup, add a splash of milk or cream at the end.
