- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup fresh cranberries
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
- In a bowl, combine flour, powdered sugar, and salt. Cut in cold butter until crumbly. Press into the bottom of the baking dish. Bake for 20 minutes.
- While crust bakes, combine cranberries, sugar, eggs, lemon juice, lemon zest, and cornstarch in a saucepan. Cook over medium heat until thickened and cranberries burst, about 8 minutes.
- Pour the cranberry lemon filling over the baked crust. Return to oven and bake for an additional 20 minutes.
- Allow to cool completely before slicing. Garnish with additional lemon zest or cranberries if desired.
Notes
- Ensure the filling is thickened sufficiently to hold its shape.
- Chill bars before cutting for cleaner slices.
