Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh cranberries
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
  2. In a bowl, combine flour, powdered sugar, and salt. Cut in cold butter until crumbly. Press into the bottom of the baking dish. Bake for 20 minutes.
  3. While crust bakes, combine cranberries, sugar, eggs, lemon juice, lemon zest, and cornstarch in a saucepan. Cook over medium heat until thickened and cranberries burst, about 8 minutes.
  4. Pour the cranberry lemon filling over the baked crust. Return to oven and bake for an additional 20 minutes.
  5. Allow to cool completely before slicing. Garnish with additional lemon zest or cranberries if desired.
