Ingredients

  • 1 cup grated carrots
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • Optional glaze: powdered sugar and lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix mashed bananas, oil, and eggs until well combined.
  3. In another bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  4. Add dry ingredients to wet and mix until just combined.
  5. Fold in grated carrots and walnuts.
  6. Pour batter into loaf pan and bake for 60-65 minutes or until a toothpick comes out clean.
  7. Let cool, then optionally top with glaze made from powdered sugar and lemon juice.
