- 3 ripe bananas, mashed
- 1 cup grated carrots
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- Optional glaze: powdered sugar and lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mix mashed bananas, oil, and eggs until well combined.
- In another bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
- Add dry ingredients to wet and mix until just combined.
- Fold in grated carrots and walnuts.
- Pour batter into loaf pan and bake for 60-65 minutes or until a toothpick comes out clean.
- Let cool, then optionally top with glaze made from powdered sugar and lemon juice.
Notes
- Use very ripe bananas for sweetness and moistness.
- Grated carrots add vibrant color and moisture.
- Store in an airtight container for up to 3 days.
