- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups (310g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups (270g) butterscotch chips
- Sea salt flakes for sprinkling
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Stir in butterscotch chips.
- Drop spoonfuls of dough onto prepared baking sheets, spacing about 2 inches apart.
- Sprinkle flaky sea salt on top of each cookie.
- Bake for 10-12 minutes until edges are golden.
- Allow cookies to cool on baking sheet for 5 minutes, then transfer to wire racks to cool completely.
Notes
- For chewy cookies, do not overbake; remove when edges are golden but centers appear soft.
- You can substitute butterscotch chips with chocolate or caramel bits for variation.
