A simple and delicious recipe for chewy sea salt butterscotch cookies that are perfect for satisfying sweet cravings with a hint of saltiness.

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups (310g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270g) butterscotch chips
  • Sea salt flakes for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Stir in butterscotch chips.
  7. Drop spoonfuls of dough onto prepared baking sheets, spacing about 2 inches apart.
  8. Sprinkle flaky sea salt on top of each cookie.
  9. Bake for 10-12 minutes until edges are golden.
  10. Allow cookies to cool on baking sheet for 5 minutes, then transfer to wire racks to cool completely.

Notes

  • For chewy cookies, do not overbake; remove when edges are golden but centers appear soft.
