- 1 cup wild rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 cup mushrooms, sliced

- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse wild rice thoroughly.
- In a large pot, heat olive oil over medium heat. Sauté onion, carrots, celery, and garlic until tender.
- Add wild rice, vegetable broth, mushrooms, thyme, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 45-50 minutes or until rice is cooked and tender.
- Adjust seasoning, garnish with fresh parsley, and serve hot.
Notes
- For a creamier texture, add a splash of plant-based cream before serving.
- You can substitute chicken broth for a non-vegetarian version.
