- 8 large flour tortillas
- 6 eggs, beaten
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup cooked sausage or bacon (optional)
- 1 cup enchilada sauce
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers
- 1/4 cup chopped fresh cilantro
- Sour cream and salsa for serving
Instructions
- Preheat oven to 375°F (190°C).
- Warm tortillas slightly to make them pliable.
- Sauté onions and peppers until soft.
- Grease a baking dish, spread a thin layer of enchilada sauce.
- Fill each tortilla with eggs, cheese, cooked sausage or bacon (if using), and sautéed vegetables.
- Roll up tortillas and place seam-side down in the dish.
- Pour remaining sauce over the top and sprinkle with cheese.
- Bake for 20-25 minutes until bubbly and cheese is golden.
- Garnish with cilantro, and serve with sour cream and salsa.
Notes
- You can add sautéed mushrooms or spinach for extra flavor.
- Adjust spice levels by adding jalapeños or chili powder.
