  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Warm tortillas slightly to make them pliable.
  3. Sauté onions and peppers until soft.
  4. Grease a baking dish, spread a thin layer of enchilada sauce.
  5. Fill each tortilla with eggs, cheese, cooked sausage or bacon (if using), and sautéed vegetables.
  6. Roll up tortillas and place seam-side down in the dish.
