- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 cup chopped spinach
- 1 carrot, sliced
- 1 celery stalk, sliced
Instructions
- Preheat oven to 375°F (190°C). In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
- Form into small meatballs and place on a baking sheet. Bake for 20 minutes.
- In a large pot, bring chicken broth to a boil. Add diced tomatoes, carrots, and celery.
- Gently add baked meatballs and simmer for 15 minutes.
- Stir in chopped spinach and cook for an additional 5 minutes.
Notes
- For extra flavor, add a splash of red wine to the broth.
- Serve with crusty bread or garlic toast.
