  • 1 can diced tomatoes
  • 1 cup chopped spinach

Instructions

  1. Preheat oven to 375°F (190°C). In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
  2. Form into small meatballs and place on a baking sheet. Bake for 20 minutes.
  3. In a large pot, bring chicken broth to a boil. Add diced tomatoes, carrots, and celery.
  4. Gently add baked meatballs and simmer for 15 minutes.
  5. Stir in chopped spinach and cook for an additional 5 minutes.
