A deliciously creamy buffalo chicken casserole with cauliflower, cheese, and a spicy buffalo sauce, baked until bubbly and golden.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 medium head cauliflower, cut into florets
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a large bowl, mix shredded chicken, buffalo sauce, sour cream, salt, and pepper.
  3. Steam or roast cauliflower until tender and drain excess water.
  4. Spread cauliflower evenly in the baking dish, then top with buffalo chicken mixture.
  5. Sprinkle shredded cheese over the top.
  6. Bake for 25-30 minutes until bubbly and golden on top.
  7. Garnish with chopped green onions before serving.
