- 12 oz (340 g) penne or pasta of choice
- 1 lb (450 g) chicken sausage or chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 4 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) shredded cheese (cheddar or Monterrey Jack)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a slow cooker, add sliced chicken sausage, bell peppers, garlic, Cajun seasoning, olive oil, salt, and pepper. Stir to combine.
- Cover and cook on low for 4 hours or on high for 2 hours.
- Stir in heavy cream and shredded cheese. Cover and cook for an additional 15 minutes until cheese is melted and sauce is creamy.
- Mix cooked pasta into the sauce. Garnish with fresh parsley. Serve hot.
Notes
- You can substitute chicken sausage with cooked chicken breasts or shrimp for variety.
- Adjust Cajun seasoning to taste for more or less spiciness.
- For a gluten-free version, use gluten-free pasta.
