- 1.5 pounds beef sirloin, cubed
- 4 medium potatoes, chopped
- 4 cloves garlic, minced
- 1/4 cup unsalted butter
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place beef cubes and chopped potatoes in the slow cooker.
- In a saucepan, melt butter and add minced garlic, thyme, salt, and pepper. Pour over the beef and potatoes.
- Cover and cook on low for 6-8 hours until beef is tender and potatoes are crispy.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add carrots or other root vegetables for added flavor.
- For a crispy finish, broil the potatoes for a few minutes after slow cooking.
