- 9 lasagna noodles
- 2 cups sliced mushrooms
- 3 cups fresh spinach
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 2 cups marinara sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions; drain.
- In a skillet, heat olive oil and sauté mushrooms until tender. Add spinach and cook until wilted. Season with salt and pepper.
- In a baking dish, spread a thin layer of marinara sauce. Layer noodles, mushroom-spinach mixture, ricotta, and mozzarella. Repeat layers.
- Top with remaining sauce and cheese. Cover with foil.
- Bake for 30 minutes, then remove foil and bake an additional 10 minutes until bubbly and golden.
Notes
- Use fresh spinach for best flavor.
- Feel free to add red pepper flakes for a spicy kick.
