- 1 pound Italian sausage
- 1 package (9 ounces) refrigerated tortellini
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
- Sauté onion and garlic in the same pot until fragrant and translucent.
- Pour in chicken broth, bring to a boil, then reduce heat to simmer.
- Add cooked sausage and tortellini to the soup, cook until tortellini is tender, about 5 minutes.
- Stir in heavy cream, season with salt and pepper, and cook for another 2 minutes.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add spinach or other greens for extra veggies.
- Use gluten-free tortellini for a gluten-free version.
