- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook rice according to package instructions; set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and paprika. Brown the chicken on both sides until cooked through, about 6-8 minutes per side. Remove and set aside.
- In the same skillet, sauté diced onion and garlic until translucent. Add heavy cream and bring to a simmer.
- Stir in shredded cheese until melted and sauce thickens.
- Return chicken to the skillet, spooning sauce over it. Let simmer for 5 minutes.
- Serve chicken over rice, garnished with parsley. Enjoy your comforting dinner!
