Instructions

- Brush zucchini slices lightly with olive oil, then coat each slice evenly with the breadcrumb mixture.
- Arrange coated zucchini slices on the prepared baking sheet.
- Bake for 15-20 minutes or until golden and crispy. Serve warm garnished with fresh herbs if desired.
Notes
- For extra crispiness, spray the coated zucchini lightly with cooking spray before baking.
- Try adding a pinch of red pepper flakes for some heat.
