- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced red onions
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 20 egg roll wrappers
- Oil for frying
Instructions
- Mix black beans, corn, cheese, bell peppers, red onions, cumin, and chili powder in a bowl.
- Place a small amount of filling in the center of an egg roll wrapper.
- Fold in the sides and roll up tightly, sealing with a little water.
- Heat oil in a deep frying pan over medium heat.
- Fry egg rolls in batches until golden and crispy, about 3-4 minutes each side.
- Drain on paper towels and serve hot with dipping sauce.
