A simple recipe for cheesecake cookies that combines a rich cheesecake filling with a crumbly cookie base, baked to perfection.

Ingredients

  • 2 cups graham cracker crumbs
  • 3/4 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup sugar

Instructions

  1. Mix graham cracker crumbs with melted butter to form a crumbly mixture. Press into the bottom of lined baking sheets to form a crust.
  2. In a bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth. Chill until firm.
  3. In another bowl, whisk flour, baking powder, and salt. Set aside.
  4. Prepare cheesecake filling by folding cream cheese mixture into the sugar. Drop spoonfuls onto cookie base.
  5. Bake at 350°F (175°C) for 12-15 minutes until golden. Cool before serving.
