- 2 cups graham cracker crumbs

Instructions
- Mix graham cracker crumbs with melted butter to form a crumbly mixture. Press into the bottom of lined baking sheets to form a crust.
- In a bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth. Chill until firm.
- In another bowl, whisk flour, baking powder, and salt. Set aside.
- Prepare cheesecake filling by folding cream cheese mixture into the sugar. Drop spoonfuls onto cookie base.
- Bake at 350°F (175°C) for 12-15 minutes until golden. Cool before serving.
Notes
- Chill the cream cheese mixture for easier layering.
- Use a cookie scoop for uniform cookies.
