- 4 boneless, skinless chicken breasts
- 8 oz brie cheese, sliced
- 1 cup fresh cranberries
- 1/2 cup orange juice
- 1/4 cup honey
- 2 tablespoons fresh thyme
- Salt and pepper to taste
- Olive oil for baking
Instructions
- Preheat oven to 375°F (190°C).
- Slice a pocket into each chicken breast and stuff with slices of brie cheese.
- Season chicken with salt and pepper, then sear in a skillet with olive oil until golden.
- Transfer to a baking dish.
- Combine cranberries, orange juice, honey, and thyme in a saucepan; simmer until cranberries burst and sauce thickens.
- Pour cranberry sauce over chicken breasts.
- Bake for 25-30 minutes until chicken is cooked through.
- Garnish with fresh thyme before serving.
Notes
- Use plastic or metal skewers to help stuff the chicken easily.
- Can be prepared a day ahead and baked before serving.
- Serve with roasted vegetables or a green salad for a complete meal.
