  • 4 boneless, skinless chicken breasts
  • 8 oz brie cheese, sliced
  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 2 tablespoons fresh thyme
  • Salt and pepper to taste
  • Olive oil for baking

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast and stuff with slices of brie cheese.
  3. Season chicken with salt and pepper, then sear in a skillet with olive oil until golden.
  4. Transfer to a baking dish.
  5. Combine cranberries, orange juice, honey, and thyme in a saucepan; simmer until cranberries burst and sauce thickens.
  6. Pour cranberry sauce over chicken breasts.
  7. Bake for 25-30 minutes until chicken is cooked through.
  8. Garnish with fresh thyme before serving.
