Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a greased 9-inch springform pan. Bake for 10 minutes.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and cinnamon. Mix in sour cream.
- Pour batter over crust and bake for 55-60 minutes. Let cool.
- Prepare churros: pipe cinnamon-sugar churros onto a baking sheet and bake at 375°F for 15 minutes until golden.
- Top cheesecake with churros, drizzle caramel sauce, and sprinkle with cinnamon sugar before serving.
