- 2 cups cooked rice
- 1 lb boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tbsp fajita seasoning
- 1 tbsp olive oil
- 1 avocado, sliced
- 1/2 cup shredded cheese (cheddar or monterey jack)
- Fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Season chicken slices with fajita seasoning.
- Heat olive oil in a skillet over medium-high heat and cook chicken until browned and cooked through, about 5-7 minutes.
- In the same skillet, sauté bell peppers and onions until tender, about 5 minutes.
- Assemble bowls by dividing rice, chicken, peppers, and onions among serving bowls.
- Top with shredded cheese, avocado slices, cilantro, and a squeeze of lime. Serve immediately.
Notes
- You can use pre-cooked rice to save time.
- Adjust spice level with more or less fajita seasoning.
- Add salsa or sour cream for extra flavor.
