Ingredients

- 2 pounds beef stew meat, cubed
- 4 large potatoes, chopped
- 3 carrots, sliced
- 1 cup peas
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Place beef, potatoes, carrots, onion, garlic, thyme, salt, and pepper into the crock pot.
- Pour in beef broth and add tomato paste; stir to combine.
- Cover and cook on low for 6-8 hours until meat and vegetables are tender.
- In the last 30 minutes, add peas and cook uncovered if you’d like the stew to thicken slightly.
Notes
- Feel free to add corn or celery for extra flavor and texture.
- Vegetarian version can replace beef with mushrooms and vegetable broth.
