- 4 large russet potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped green onions and cheddar cheese for garnish
Instructions
- Place diced potatoes, onion, garlic, broth, salt, and pepper into the crock pot. Cover and cook on low for 6-8 hours.
- Once potatoes are tender, mash slightly with a fork or potato masher inside the crock pot.
- Stir in heavy cream and butter, cook on low for an additional 30 minutes.
- Serve hot, garnished with green onions and cheese.
Notes
- You can add cooked bacon or leeks for extra flavor.
- If you prefer a smoother soup, blend part of the mixture with an immersion blender.
