- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Arrange chicken and potatoes on a baking sheet. Drizzle with olive oil, then season with garlic, thyme, salt, and pepper.
- Bake for 25 minutes, then sprinkle Parmesan cheese over the chicken and potatoes.
- Return to oven and bake for an additional 10 minutes until cheese is golden.
- Garnish with fresh parsley and serve hot.

- Can substitute chicken thighs for breasts.
