- 2 pounds beef stew meat, cubed
- 3 carrots, sliced
- 3 potatoes, diced
- 1 cup peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Brown the beef chunks until all sides are seared, then remove and set aside.
- In the same pot, sauté onions and garlic until fragrant.
- Add tomato paste, thyme, salt, and pepper, cooking for 2 minutes.
- Return beef to the pot, pour in beef broth, and bring to a boil.
- Reduce heat, cover, and simmer for 1.5 hours until beef is tender.
- Add carrots, potatoes, and peas, cook for another 30 minutes until vegetables are tender.
Notes
- For added flavor, include a splash of red wine during simmering.
- Adjust salt and pepper according to taste.
- Serve with crusty bread for a complete meal.
