- 1 pound ground beef
- 1 cup shredded mozzarella cheese
- 1 egg
- 1/2 cup breadcrumbs
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 4 cups chicken broth
- 1 package cheese tortellini
- 1 cup chopped spinach
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F. Mix ground beef, mozzarella, egg, breadcrumbs, Italian seasoning, and garlic powder. Form into small meatballs and bake for 15 minutes.
- In a large pot, bring chicken broth to a boil. Add baked meatballs and cook for 5 minutes.
- Add tortellini and cook until tender, about 3-5 minutes.
- Stir in chopped spinach and cook until wilted, about 2 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- For extra flavor, add a splash of Parmesan cheese before serving.
- You can substitute spinach with kale or other greens.
