- 4 large bell peppers (red, yellow, or green)
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, cook ground beef with diced onion and minced garlic until browned.
- Add taco seasoning and cooked rice, mix well.
- Stuff the peppers with the beef mixture and place in a baking dish.
- Sprinkle with shredded cheese and bake for 20-25 minutes.
- Garnish with diced tomatoes and cilantro before serving.
Notes
- You can substitute ground chicken or turkey for beef.
- Add jalapeños for extra spice.
