- 1 cup coconut milk

Instructions
- Preheat oven to 400°F (200°C).
- Season cod fillets with salt and pepper.
- Heat olive oil in a skillet over medium heat and sear the fish for 2-3 minutes each side.
- Transfer to a baking dish and bake for 12-15 minutes.
- Meanwhile, mix coconut milk and lemon juice in a saucepan and simmer until slightly thickened.
- Pour the sauce over the baked fish and garnish with herbs.
