Ingredients

  • 2 cups finely chopped broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray for baking

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and spray lightly with olive oil.
  2. Steam or microwave chopped broccoli until tender, then drain and pat dry.
  3. In a large bowl, combine broccoli, shredded cheese, Parmesan, eggs, almond flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Form mixture into small rounds or patties and place on prepared baking sheet.
  5. Spray the tops lightly with olive oil spray and bake for 15-20 minutes until golden brown and crispy.
