- 6 large carrots, peeled and sliced

Instructions
- Steam or boil carrots until tender, about 10-12 minutes.
- Drain and transfer to a mixing bowl.
- Add olive oil, minced garlic, salt, and pepper.
- Mash with a fork or potato masher until smooth or to your desired consistency.
- Garnish with chopped parsley and serve warm.
