Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potatoes and carrots with olive oil, salt, pepper, and herbs.
- Spread evenly on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway, until vegetables are tender and slightly caramelized.
