- 8 oz pasta (penne or bowtie)
- 1 cup cooked sweet corn kernels
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/4 cup crumbled queso fresco (optional)
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, drain and rinse with cold water.
- In a large bowl, combine cooked pasta, corn, cilantro, green onions, and queso fresco.
- In a small bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
- Pour dressing over the pasta mixture and toss to combine.
- Serve immediately or chill for 30 minutes before serving.
Notes
- Feel free to add diced jalapenos for extra heat.
- Use Greek yogurt instead of mayonnaise for a healthier version.
