Ingredients

  • 1 pound kielbasa sausage, sliced
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté sliced kielbasa until browned. Remove and set aside.
  2. In the same pot, add diced onion, carrots, and celery. Cook until vegetables are tender.
  3. Add garlic and cook for 1 minute.
  4. Pour in chicken broth and diced tomatoes. Add thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Return kielbasa to the pot and heat through. Serve hot.
