- 1 lb beef stew meat, cubed
- 4 cups beef broth
- 2 carrots, diced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 1 cup green beans, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add beef cubes and cook until browned.
- Add chopped onion and garlic; sauté until fragrant.
- Pour in beef broth, bring to a boil.
- Add carrots, celery, potatoes, salt, and pepper. Reduce heat and simmer for 45 minutes or until vegetables and beef are tender.
- Add green beans and tomato paste; cook for an additional 10 minutes.
- Garnish with chopped parsley before serving.
Notes
- For a richer flavor, simmer the soup longer or add a splash of red wine.
- Adjust salt and pepper to taste.
