- 4 boneless, skinless chicken breasts
- 1 cup of shredded Monterey Jack cheese
- 6 slices of cooked bacon, crumbled
- 1/2 cup of barbecue sauce
- 2 tablespoons of olive oil
- 1/2 cup of chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Brush chicken breasts with olive oil and season with salt and pepper.
- Grill chicken for 6-8 minutes per side until cooked through.
- In the last 2 minutes, brush with barbecue sauce and top with shredded cheese and crumbled bacon.
- Allow cheese to melt, then transfer to serving plates.
- Garnish with chopped green onions before serving.
Notes
- You can substitute chicken thighs for breasts for extra juiciness.
- For a lighter version, use turkey bacon and reduced-fat cheese.
