- 1 pound breakfast sausage
- 8 large eggs
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1 cup chopped bell peppers
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons chopped fresh chives
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook sausage in a skillet until browned and crumbled. Drain excess grease.
- In a large bowl, whisk together eggs, milk, salt, pepper, and paprika.
- Add cooked sausage, chopped vegetables, and cheese to the egg mixture. Mix well.
- Pour the mixture into the prepared baking dish.
- Bake for 30-35 minutes, or until the casserole is puffed and golden around the edges. Garnish with chopped chives before serving.
Notes
- For extra flavor, add diced onions or spinach to the mixture.
- Can be prepared the night before for an easy morning bake.
