- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 red bell pepper, diced
- 2 teaspoons Cajun seasoning
- 2 tablespoons olive oil
- 2 cloves garlic, minced

- Fresh parsley for garnish
Instructions
- Season chicken breasts with Cajun seasoning, salt, and pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Cook chicken until golden and cooked through, about 5-6 minutes per side. Remove and set aside.
- Add remaining olive oil to the skillet. Sauté garlic and bell peppers until tender.
- Add orzo pasta and cook until lightly toasted, about 2 minutes.
- Pour in chicken broth, bring to a simmer, cover, and cook until orzo is tender, about 10 minutes.
- Slice the cooked chicken and serve over the orzo with fresh parsley.
