- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans (15 oz), drained
- 1 can corn (15 oz), drained
- 1 cup beef or chicken broth
- 1 packet taco seasoning
- Shredded cheddar cheese
- Fresh cilantro, chopped
- Lime wedges for serving
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add onion and garlic; cook until softened.
- Stir in diced tomatoes, beans, corn, broth, and taco seasoning. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Serve hot, topped with cheese, cilantro, and lime wedges.
Notes
- You can add chopped jalapenos for extra heat.
- Use ground turkey or chicken as a healthier alternative.
